Herb Encrusted Pork Tenderloin marinated, herb encrusted served with a bordelaise sauce, grilled asparagus, and cranberry hash  

Flame Grilled Steak choice filet, served with manchego au gratin potatoes, mixed seasonal vegetables, and demi glace

Lamb Tagine hearty chunks of lamb braised with apricots, figs, dates, cinnamon, and harrisa, served with couscous and pita bread  

Almond Encrusted Redfish served with grilled shrimp, mashed potatoes, in a sun-dried tomato beurre blanc  

Pesto Pasta creamy pine nut pesto sauce, with mushrooms, red onion, zucchini, red peppers, spinach, and artichoke hearts ,   with salmon  

Eggplant Parmesan tempura battered eggplant layered with mozzareall and marinara sauce, topped with feta crumbles and a mediterranean relish of olives and artichokes  

Paella a braised dish of saffron rice and vegetables, choose:    

    Seafood shrimp, scallops, white fish, & mussels

    Valencia chicken, duck, and sausage

    Mixed a mix of both seafood and valencia
